Tapioca Pudding

The following recipe was transcribed ver batim from 

The Southern Christian Advocate

Columbia, South Carolina

May 24, 1894

Wash one cup of tapioca in several waters, pour over it a quart of milk and let it soak in  warm place three hours, or until transparent. Then add to it three or four eggs well beaten, a small cup of sugar, salt and spice to taste. Peel and core eight apples, place in a pudding-pan, pour over them the tapioca and bake until the apples are done. Serve hot or cold.
