The following recipe was transcribed ver batim from 

The Gainesville Reporter

Gainesville, Alabama

March 17, 1881

Half a shank of beef, one-half teacupful of rice, one-half dozen potatoes, pared and sliced in 3 or 4 pieces, two onions sliced (put in before potatoes), two turnips sliced, one carrot sliced, one tomato, a little summer savory, pepper and salt, thicken with flour.
